This vanilla puff pancake recipe has quickly become a family favorite around our house. It’s quick and easy to make and we usually always have all the ingredients on hand when the mood strikes.

The pancake is at its puffiest when you first take it out of the oven and will deflate a little bit as it cools. Serve this with a side of strawberries or blueberries or whatever favorite fruit you have on hand and breakfast is sure to be a win!
Oh, and don’t forget the coffee!
Ingredients
1 cup all-purpose flour
1 cup milk
pinch of salt
1 TBSP brown sugar
2 tsp vanilla extract
5 eggs
1 TBSP butter
Directions
- Preheat the oven to 400℉.
- In a medium mixing bowl, whisk milk and flour together until blended. Add salt, brown sugar, vanilla, and eggs and whisk again until well blended.
- On the stove top, in a 10-inch cast iron skillet, melt the butter and spread evenly around the pan and up the sides a little. (You can also make this in a casserole type dish if you do not have a skillet, just grease the pan with soft butter and skip this step).
- Pour the batter into the warmed skillet and carefully place it into the preheated oven.
- Bake for approximately 20 minutes, or until the edges turn golden and the center is set.
- Top with powdered sugar and serve!
