Don’t toss that sourdough discard! Make these deliciously easy sourdough pancakes with home-cooked cinnamon apple topping instead. These are a family favorite at our house and are perfect for a special weekend breakfast.

Sourdough Pancakes with Cinnamon Apple Topping Recipe
Ingredients
2 cups all-purpose flour
2 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon salt
1 cup sourdough starter or discard
1 ½ cup milk
1 egg, beaten
2 tablespoons canola oil or melted butter
2 teaspoons vanilla extract
For the topping
3 apples, of your choice
1 teaspoon cinnamon
2 tablespoons water

Instructions
- In a large mixing bowl, add all of the dry ingredients and whisk until combined. Add the rest of the ingredients and mix well with the whisk.
- Heat griddle, cast iron pan, or whatever you prefer to cook pancakes in. Lightly oil or butter the pan.
- Pour ¼ to ⅓ cup of batter onto the heated pan, cooking over medium heat until the pancake starts to bubble on top and then flipping and cooking until complete.
- For the apple topping, peel and slice apples off the core. Place apples, cinnamon and water in a pan on the stove top. Cook over medium heat until the apples are soft. If the water cooks off before the apples are soft, add a little more to prevent burning. Adjust cinnamon amount to your personal preference.
