Okay, I know some of you are appalled at the thought of chili without meat, but trust me, you really won’t miss it in this homemade vegetarian chili recipe! This is a one-pot go-to recipe of mine for when I forget to defrost meat or seafood in time and thus, the reason for its appearance in my kitchen. This recipe is easily adaptable to add or replace anything you want in it as well as the amount so the options are endless. Serve it with a warm, fresh from the oven, loaf of sourdough and you cannot go wrong!

Ingredients
1 tbsp olive oil
2-3 cloves of garlic, minced
1 medium onion, diced
2-3 medium sized sweet potatoes, diced
1 (15 oz) can of corn, drained
1 (15 oz) can of black beans, drained and rinsed (or bean of your choice)
1 (15 oz) can of fire roasted tomatoes
2 (15 oz) cans of tomato sauce
8 oz broth
2 tbsp chili powder (adjust more or less to your preference)
Water for thinning (I add about 4 oz, this mostly cooks out as the chili simmers and the potatoes boil.)
Salt to taste
Directions
- Prepare all of the ingredients.
- Heat olive oil in a large pot. Add garlic and onion, and sauté until fragrant and onions are caramelized.
- Add all the remaining ingredients to the pot and simmer until the sweet potatoes are soft.
Easy Homemade Vegetarian Chili

Notes
You can easily add any meat to this, we’ve added ground venison and ground beef before. You may find you need more liquids to accommodate more ingredients. Add some more if you wish!
Serve chili over rice, noodles, or by itself topped with cheese and sour cream. Whatever you decide, it will be delicious!
And yes, you can easily add meat to this recipe if you choose. We’ve enjoyed adding venison or ground beef to ours on occasion. However, you may find that you will need more broth and water to accommodate the additional ingredient.
