Slow Cooker Pepper Steak Recipe
Ingredients
1 ½ – 2 pounds beef round steak, cut into 1×3 inch strips
2 tablespoons olive oil, or oil of your preference
¼ cup soy sauce
1 garlic clove, minced
1 cup chopped onions
½ teaspoon salt
¼ teaspoon ground black pepper
¼ teaspoon ground ginger
2 large green peppers, cut in strips (I also like to use yellow, orange and red bell peppers or a mix)
4 tomatoes cut into eighths or 16 ounce can of diced tomatoes
½ cup cold water
1 tablespoon cornstarch

Instructions
- Brown beef in oil in a saucepan. Transfer to a slow cooker.
- Combine soy sauce, garlic, onions, salt, ground black pepper, and ginger. Pour the mixture over the meat, cover, and cook on low for 5-6 hours.
- After 5-6 hours, add the sliced peppers and tomatoes, cover again and continue to cook on low for another hour.
- Combine water and cornstarch and stir it into the slow cooker. Cook on high for about 10 minutes until thickened.
- Serve slow cooker pepper steak over rice or noodles.
